The youngest son of Columbia Restaurant founder Casimiro Hernandez Sr., Evelio’s nickname was short for "muchacho,” or “The Kid.” Chacho's responsibility was to roast the coffee for the hundreds of customers who came to eat each day at the Columbia Restaurant on Seventh Avenue in Ybor City.
Chacho’s coffee roasting was so beloved that it helped the Columbia Restaurant survive the financial perils of the Great Depression.
The coffee you’re tasting today is roasted by Naviera Coffee Mills in Tampa using the same recipe, now nearly a century old, that Chacho used for decades.
