Chacho’s Coffee Tradition
Evelio “Chacho” Hernandez, the youngest son of Columbia founder Casimiro Hernandez Sr., earned his nickname from muchacho—“the kid.” His daily responsibility was roasting coffee for the hundreds of guests dining on Seventh Avenue in Ybor City.


Chacho’s coffee roasting was so beloved that it helped the Columbia Restaurant weather the financial hardships of the Great Depression.
The coffee you’re tasting today is roasted in Tampa by Naviera Coffee Mills using the same nearly century-old recipe Chacho used for decades. This ensures the tradition and legacy live on for future generations to come!
